Ok, this issue is now resolved. It was an Intel BIOS/firmware bug.

DQ77MK BIOS v0050 has this in the changelog/releasenotes:
"Fixed issue with UEFI Linux* installation."

And indeed, with BIOS 0050 I can now successfully UEFI boot both Fedora 17 and RHEL 6.3.
