I think that most of them are desktop agnostic. Gimp uses GTK but works fine in all environments, but sometimes, in Gnome Shell. Krita (is not installed by default) is KDE but works fine in Gnome. The other programs, I think they have no difference how works in one desktop or another.

The same above. But I find more useful KDM than LightDM. Just a thought.
3. Do we prefer classical desktop environment, or gnome-shell? If gnome-shell go with GNOME/GDM.
I prefer classical environments, specially when I have more than one window open (most of time). But is just my opinion and the other desktop are available for download after the installation.
4. Do we need all the functions of gnome, or is a smaller set enough? If smaller set suffices, go for LXDE/LXDM?, if not, go for MATE/GDM?.
What kind of functions are you thinking of?
I hope I didn't missed anything. As for some of the questions raised: for web-browser and mail client I'd suggest either: a) firefox/thunderbird (both XUL based) b) midori/claws (which is what I use) c) epiphany/evolution (GNOME defaults IIRC) d) konqueror/kmail (KDE defaults IIRC)
Can I suggest Firefox/Evolution? Firefox as browser is more complete, and Evolution is integrated with Gnome and a bit less with KDE (with a workaround).
for non-linear video editing, pitivi is a good choice.
Kdenlive, Pitivi and Openshot are my favorites. Openshot is very simple, the others are more complete but all of them are wonderful. So Pitivi is fine to me.
