An ext3 problem wouldn't normally be expected to result in the partition table being trashed, as that table lies outside of any ext3 filesystem and can only be corrupted if something is stomping on the boot sector of the disk. It might be worth setting up a remote console monitor for those systems (Ingo's netconsole stuff is great for that if you've got a supported ethernet card), as the kernel error logs prior to any corruption are likely to shed light on whether this might be a hardware or software problem.
