I'd say it's safe in terms of data integrity. In terms of availability, that's something you'll want to test thoroughly e.g what happens when the cluster is in recovery, does the filesystem remain accessible?
I think you'll be disappointed in terms of performance, I found OCFS2 to be slightly better in that regard.
My advice would be, confirm Cephfs can't give you the performance you need before you embark on an architecture like this.
