For CD backups you may want to try Mondo

I haven't used it myself since my method with backing up only critical 
files is sufficient for me. OS can always be downloaded and installed
which also gives you an opportunity to upgrade as well. I don't know hod
user friendly it is for people with limited vision. For what I see on
the website, it's ncurses based with horizontal bar showing the backup
progress. The text also says it created boot disk and multiple data
disks. Here is text from the website:

"About:

Mondo Rescue archives Linux and Lin/Win sytems to tapes or CDs, which
may be used to restore some or all of your OS and data in the event of
catastrophic data loss. The emphasis is on stability and ease of use.
Currently, ext2, ext3, (v)fat, minix, ReiserFS, XFS, and JFS filesystems
are supported, as are RAID and LVM. "
