You might find a starting point with the following scripts:

http://www.linwin.com/sysadmin/bin/clone.scsi and
http://www.linwin.com/sysadmin/bin/cp_disk

One is for scsi and the second for ATA drives. Make sure you edit the
files before you execute them or you might destroy your data.

If you are going to keep the old drive around make backup of critical
files only. There is no need to backup binaries you installed from the
CD or Internet. You only need to backup config info from /etc.

I backup only a portion of my home directory with the following script:

http://www.linwin.com/sysadmin/bin/my.backup

Check the script to see which directories and files get backed up and
where. The script gives you an idea how to create CD image to backup
your files if the total is less than the size of CD. Adapt to your
needs. No need to backup deb, rpms, etc. that can be downloaded from
the internet. I do create 2 files with the tree information about
all files I have in my home dir. That way it's easy to go back on the
internet and download them again.
