mod_rewrite, using rewrite maps:

    http://httpd.apache.org/docs/mod/mod_rewrite.html
    http://httpd.apache.org/docs/misc/rewriteguide.html

For large numbers of virtual hosts, I'd suggest the DBM option. I've run
Apache instance with several thousand virtualhosts configured this way
withtout issue.
