the important thing is that this command uses Bonjour (which use mDNS,

printer's web interface
then it will not be detected as a scanner.
This also answers my own question about how the URI is determined at
least in one case
If I have Bonjour enabled on my printer I get 2 devices.

I'm guessing that the single entry is as a result of installing the
printer/fax/scanner
under hplip. But I've not yet determined where that entry comes from.
