Everything on that page related to the creation or use of a user account falls under a section that reads "To provide authentication."

You're not trying to provide authentication.  So you don't need a user account.  If you're creating a user account, then it's not a guest account and you have to provide a password.  I see why you're confused, but that's the purpose of the "map to guest" setting.  You don't need to create an account to provide anonymous shares.
