Then, if you'd like to have messages delivered in separate folders for each category/tag, you can use the X-Headers in the email sent by Discourse ("X-Discourse-Category" and "X-Discourse-Tags"). I've already tried to reply by email to a post and it worked. But I've not tried to start a new thread.
