I checked - the patches were simply skipping the compilation of the
various pieces of Anaconda that link against X.  When I made my last
text-only installs, I simply started with a set of packages that did
not include X.

upd-instroot is a sub-script that is run by buildinstall.  It takes
all the packages and extracts all the various files that are needed to
create the installer images such as stage2.img.
