This is probably the fault of kudzu.  Notice that the CD-ROM and floppy
entries in /etc/fstab have a 'kudzu' option (well they would if you had
the entries).  I believe that kudzu also creates/destroys the /mnt
entries.  Does /etc/sysconfig/hwconf contain a CDROM or FLOPPY class? 
Have you tried running kudzu (or perhaps you left out that rpm)?
