Aha! I think my problem is that my "default" device is type "pulse", and is not "dmix:0" at all.
Now that I've modified my /usr/share/alsa/alsa.conf.d/99-pulseaudio-default.conf file so that
"default" is not type "pulse", the "default" can share with my "51to21" device quite happily.
