Well I figured it out:

pcm.SoftVol {
     type softvol
     slave.pcm "spdif"
     control {
         name "SoftVol"
         card 0
     }
}

pcm.!default {
     type plug
     slave.pcm "SoftVol"
}

Now it would be nice if I could actually make a separate softvol which I could call with alsamixer via F6 or cli, so I'll keep looking for that one.
