  You can't use more than 800x600 because you've specified your
monitor specifications as one of a simple vga monitor.

(II) NV(0): Monitor0: Using hsync range of 31.50-37.90 kHz
(II) NV(0): Monitor0: Using vrefresh range of 50.00-70.00 Hz

   According to information I see on the web your Monitor section
in the XF86Config should have

        HorizSync   30 - 96
        VertRefresh 50 - 160

   I don't know about the missing cursor.  I've heard one other
report on that on nForce, but I've not reproduced it myself.  You
should be able to get it back with 

   Option "SWCursor" 

in the Section "Device" of the XF86Config.
