The best bet for Skyrim is that it won't work at all with Wine. Just look at the list of newest apps in AppDB they mostly rated as garbage in the test results:

Oblivion is looking good on Wine just check the link provided by claudio.

StarCraft 2 for now is unplayable. Even on the most powerful computers you will get 15 to 30fps (which is totally uplayable and unacceptable). If you look in AppDB you will also find over a dozen bug reports related to that game.

the Beta version has been rated as Gold (it could be even Platinum).

Generally games on Wine get quite significant performance drop and if Skyrim will work with Wine you will probably get the half fps of that from Windows (maybe even less).
