It is difficult to know whether an unreleased game will work.
In general, you cannot assume that a game will "just work", or work at all, with wine.

Yes. I played Oblivion for a long time using wine, works well.
I had the Oblivion Oscuro Overhaul + many other mods and worked all great. One thing that will probably not work is the Oblivion Script Extender (OBSE) that is necessary for some MODs, none of which I actually needed after all.

I had to tweak wine a little bit, but it might not be needed anymore.
