Some distros include patches that are not merged upstream (read no included into Wine source). Some times those patches help with some programs but have other issues. That's why they are not included in Wine. Other then that, some distros split Wine into lots of pieces, which might affect some programs that trying to use part of Wine that wasn't installed.
