Pulse audio is anything but low latency audio subsystem. Using RT kernel won't help much there. Most professional audio software uses ASIO drivers that are not available from vanilla Wine. You need to compile Wine ASIO support yourself. Or find a pre-compiled binary package. Whatever distro you'll find for it, that's what you should probably use.
