I presume you've read the Red Hat Wine download page:

http://fedoraproject.org/wiki/AndreasBierfert/Wine

You need to do something like

ssh -X name.of.server

and then try to install Wine in that ssh session. It'll display X
client windows to your desktop's X server. (If you have the X11 libs
installed on the CentOS box.)
