Using the add/remove feature will remove the wine binaries (e.g. wine, winecfg, etc), as well as documentation and lib files, but not your ~/.wine directory. That directory gets created the first time you run wine and isn't included in the list of items removed by the 'add/remove' feature. You must enter "rm -rf ~/.wine" (without quotes) via a terminal window to remove it and start fresh - or enable hidden files in your GUI file manager and delete it from there.
