Doubleclicking on the app should do it.
If it doesn't, probably Wine doesn't support the
app yet.

No; it's more likely that Wine doesn't support those apps yet.
You should check http://appdb.winehq.org for tips whenever
you try a new app.

says that your first app needs msvcp60.dll.  The best way to get this is
to download and run http://kegel.com/wine/winetricks and use
it to install vcrun6.

has a little guide to using Guitar Pro.
