I haven't made a final decision on how to proceed, but I'm leaning towards taking the site offline. In this case I will archive the git repositories on gitlab or github and possibly keep a read-only instance of Redmine on my private vServer for a while.
I have not checked in detail but I think most of Redmine is already archived by archive.org. If you have a definitive date where the server will shut down, then I could make sure that all repos are archived over to https://github.com/vdr-projects where many projects are already mirrored to (many probably outdated as at some point the automated mirror service was disabled).
