In general, I don't use anything non-free or contrib, and everything works just fine. If I really really want something proprietary (non-free) or of dubious provenance (contrib), then I add them for a one-time exception, then change my sources.list back. What do the extra and deps provide you that main doesn't? I've never had a problem find dependencies for anything, but I might like trying extras, if there's something of interest there. I am a glutton for experimentation, at least sometimes.
