Should the mail server also correct people's spelling errors, fix bad 
grammar, and look up solutions for technical problems for them too?

Mail servers serve mail. If people have the bad habit of not trimming 
them quotes, and end up bottom-quoting at the end of seven pages of 
quoted material nine levels deep, that's a problem with the writer not 
the mail server.
