Nothing specific comes to mind.  You might want to install another
plugin and see if its preferences are also "forgotten."  Check your
data directory permissions/ownership and also try setting that
preference to plain text and see if the value in the preference file
changes and how it behaves after that, etc.  I don't think this is a
problem with the plugin, as I don't recall hearing this before, so
it's likely something in your PHP environment.
