The catch here is that with one-click installations, you're probably going to get a pre-configured version of SquirrelMail that is particular to whoever built your installation system. The details of how your mail server is set up determine which plugins you need for all of those functionalities. If you used a one-click installer to install all your mail system software, you'll have to either learn more about the software it installed, or ask for help elsewhere as I mentioned above.
