SquirrelMail is a mail client.  It has nothing to do with whatever
mail system you are planning to use.

SquirrelMail is not a mail server, although there are some plugins
that can provide front-ends to the user settings for some of these
tools, depending on how your mail server is set up.

Manager plugin to present a webmail interface for multiple domains

This is supported.  Check SM docs regarding storing user prefs in a DB backend.
