Or write a quick plugin (hmm, I seem to remember writing one myself
recently) that puts the date and time of last login into the user
prefs.

Deleting users is not something SM does.  It has to be done outside
the realm of the IMAP server which is SM's only method of
communicating with the mail system.  It is *possible* to have such a
plugin or functionality, but you'd need to pay someone to develop it.

Mailbox format?  I am not sure.  If you moved to maildir, there are a
few IMAP servers that can do it automatically.  There are some SM
plugins that can do this, but the user needs to log into SM to have it
happen, thus solving the problem in the IMAP server is best.
