Is there any debug info I can get to try and get to the bottom of this one -
or am I going to have to try installing the i386 version of FreeBSD7 to see
if that fixes it?

The box is only used from a shell prompt(no GUI installed), but I
installed lynx and the sites work fine.

Can you reach the sites fine if running a browser on the Squid server
but without using Squid?
