Thanks. Putting this in ~/.rpmmacros gives me the automatic behavior I wanted:
%_build_name_fmt
%%{ARCH}/%%{NAME}-%%{VERSION}-%%{RELEASE}.%%{DISTRIBUTION}.%%{ARCH}.rpm
