Note also that it isn't creating the i386 rpms under a i386
subdirectory.

The default _build_name_fmt is
%{ARCH}/%{NAME}-%{VERSION}-%{RELEASE}.%{ARCH}.rpm

Try changing your define to something like:
%{ARCH}/thenameiwant-%{VERSION}-%{RELEASE}.%{ARCH}.rpm
