After starting up Roxio, hit File->Record CD from CD Image. That shows you a filebox dialog that has .cif as the default format. Click on the drop-down for it and ISO Image is available. From there, navigate to the directory containing the ISO images.

He's not currently running a Linux system...he wants to burn the Red Hat ISOs to disc, so as to install.
