How to build specific kernels out of SRC RPM now?

Anyone know how to make the latest kernel.spec only build particular (e.g., smp) kernels? The [not that] old method of --without-bigmem etc. no longer seems to work. The only seeming way is to hack the .spec defines at the very beginning which isn't very src.rpm friendly ...
