The kernel source comes on the install CD or is available for download. RH Network also has the kernel source binaries available for download. If you use RH kernel source and recompile, you have a supported system. If you use a mainline kernel, you instantly have an unsupported system.  Nothing stopping you from doing so, but you can't go running to RH and complain that something isn't working if you don't run their kernels.

The problem of course is that there is no way RH can keep up with the frenetic release schedule of the mainline kernels so they will always be a few features short of a load. You have to make your own decisions whether it is worth your while to stick with an RH kernel or you need some functionality in mainline.
