Why not. I assume you mean you will create a new partition , mount it
on /var. Finally copy the original /var to the new /var and remove the
old /var directory. You may have to mount the new partition on /newvar
first. Copy the contents of /var to /newvar. change the name of /var
and /newvar. Then the original /var should be erased.
