If you are subscribed to the RHN this will install OpenOffice.org for you.

# up2date openoffice

Otherwise, look for the rpm's on your installation CD's and install these 
three:

openoffice-1.0.1-8
openoffice-libs-1.0.1-8
openoffice-i18n-1.0.1-8
