Do update entitlements expire?

Yes.
I was under the impression that the 'paid' support can expire but didn't
know that you stopped receiving updates via up2date as well.

An update entitlement is one aspect of what RedHat calls support, depending on what type of entitlement(s) you have.
Can someone let me know?

Is there another way to receive updates via 'up2date' but without having to
pay (again) for support?

Short answer: No.
