Chaps,
What's the difference between NetworkManager and avahi? Am I right in
thinking that the latter is mainly for mobile devices in that it
automatically sets you up with dhcp and stuff when you go to a new
location? Can a server/laptop's general networking still function
without nm? Once upon a time it was ifup this and ifdown that ;-)

NetworkManager and Avahi do two completely different things.
NetworkManager allows you to graphically manage networking interfaces
on your local computer, Avahi helps you discover various services
running on other machines on your network. Check out http://en.wikipedia.org/wiki/NetworkManager
and http://en.wikipedia.org/wiki/Avahi_(software)
Your machine will function just fine without NetworkManager.
