That depends on your requirements. I need the features of ProFTPd at my office but that doesn't mean that you need it. Of the two you specified, only vsftpd is supported by Red Hat. However, Red Hat has changed FTP servers in the past (wu-ftpd was the standard in RHEL 2.1) and they could just as easily change for RHEL 5 - I haven't seen anything to suggest that they'll stay with vsftpd or switch. If vsftpd has the features you need, I would suggest that you use it because it gives you a fully supported ftp daemon.
