I finally discovered how to make a font look condensed.
 
enscript --no-header -fCourier@7/11 -margin=7:7:21:21 --output=test.ps /usr/users/richard/test.txt
 
The 7/11 is width/height of the font.  If you decrease the width, then you can cram more text on a page!

Does anyone know where I can find a Courier Compressed font (.afm file), or if it is possible to modify the /usr/share/enscript/com.afm file (Courier font file not compressed) so that the letters would be more compressed.  I've googled it and only found commercial versions of the Courier Compressed font.  Any fixed pitch font that is compressed would work.
