man exports

specifically read about the no_/root_squash option. Remember though, that even if you squash local root on the clients, they can still su to anyone in the NIS passwd map and read that user's files. I never export a filesystem to a machine over which I don't control root for this reason (/etc/netgroup helps keep this manageable). If you need to give someone privileges to do something on their local box but they don't need ultimate power, look into sudo.
