If installed as rpm try rpm -e --noscripts sambaxxxxxxx.rpm
If tarball go to dir where you compiled samba and try I think it is make uninstall or make uinstall.
Else you try to remove the samba libs. I have always installed new versions over the old by using rpm -Uvh option.When compiling samba it does the same thing.
