www.openwebmail.com - dead easy to setup, it's all cgi based and runs under apache - access you mail from any browser, you dont even need to setup a mail client (no more nasty OE ;p)
I believe there's also an RPM package of Squirrelmail in Fedora. Great package; stable, easy to configure, easy to use.
If you're really paranoid (Ben ;p) then i dont think it would be hard to setup an SSL version.
You /should/ be paranoid. And yes, it's very easy (and recommended) to serve the webmail site via HTTPS for security.
