A small update, after upgrading from LogWatch 4.x to 5.x, I no longer get
the mail error, but it then doesn't even seem to execute /bin/mail at all,
am really out of luck here aren't I?

Here is what I am running here : (I rolled back changes from 5.x, keep it
out of the box until I figure out what's not working)

$ rpm -q postfix
postfix-1.1.13-3.rh9
$ rpm -q logwatch
logwatch-4.3.1-2
$ rpm -q mailx
mailx-8.1.1-28
