Ashley, this is exactly the combination that I'm forced to run here, and it's been pain free as far as the dual booting goes.  Now if I can just convince W2K not to hang on the modem accesses (a constant problem), it will be all ok.

Your assumption about the order of installation is correct.  I had to install W2K first, and then added RH as the second installation.  Be sure to deny W2K access to/knowledge of the second drive, or it has a tendency to try to claim all turf for itself and then act strangely when it can't access the second drive.  During the grub configuration step for RH you'll be show both the RH installation and the W2K, which will be labeled by grub as "DOS", you can rename it to what ever you choose.  Thereafter it will handle dual boot with aplomb.
