I have decided to revisit this issue. I have followed instructions found
here:

https://wiki.gnome.org/Projects/Rygel/Pulseaudio

changing

[org.gnome.UPnP.MediaServer2.PulseAudio]
enabled=false

to

[org.gnome.UPnP.MediaServer2.PulseAudio]
enabled=true

gupnp-av-cp now sees the media server, however it cannot play anything.
The error coming up is:

** (gupnp-av-cp:18184): WARNING **: no compatible URI found.

The DIDL-Lite shown is

<?xml version="1.0" encoding="UTF-8"?>
<DIDL-Lite xmlns="urn:schemas-upnp-org:metadata-1-0/DIDL-Lite/"
xmlns:dlna="urn:schemas-dlna-org:metadata-1-0/"
xmlns:dc="http://purl.org/dc/elements/1.1/";
xmlns:upnp="urn:schemas-upnp-org:metadata-1-0/upnp/">
  <item id="/org/gnome/UPnP/MediaServer2/PulseAudio/Sinks/22"
parentID="/org/gnome/UPnP/MediaServer2/PulseAudio/Sinks" restricted="0"
dlna:dlnaManaged="00000004">
    <dc:title>DLNA/UPnP Streaming</dc:title>
    <upnp:class>object.item.audioItem</upnp:class>
  </item>
</DIDL-Lite>

What is missing? Thank you for your help in advance.

Best regards,
Julian
