Hi Gab, I think to select the proper platform you also need to tell a bit on other requirements like operating system, ethernet support , cost requirements, wifi/BT, display and camera requirements, graphic acceleration for UI and also volume of the production device. If you want a low cost solution you could look at TI DM-365 which is ARM-9 + some video accelerators, Leopard board is one development board for that device A more high-end is iMX.53 or TI Omap 4 (Panda board), OMAP can be hard to get hold of if the volume is not huge. For development I would also suggest that you look on audio support of the boards some only have headset support, I prefer if they support mic input as well even if USB audio device could be used.
