I haven't implemented video with pjmedia myself, so I can't say more 
than the FAQ unfortunately.

Although pjsip, pjmedia, and pjnath is independent from one another 
so people should be able to use them separately (and some people do 
use them separately), things are not so straightforward with video, 
since pjsip is tied up with the SDP negotiator functionality and the 
SDP negotiator hasn't been tested with video.
