looking at the top 3 on the list here, personally I quite like the O'Reilly books. Can someone recommend one of these or any other that will give me a
good solid understanding of PHP security?

Have you seen Pro Php Security by Snyder and Southwell; Apress ?
It appears to be as comprehensive and well written as the subject
can get.
